Weekly batch-cooking day! Carrot cake oatmeal bake (to go with egg white bites and yogurt), gr chicken stuffed peppers and Newfoundland stuffed chicken breasts. Love finding ways to make recipes healthier, lower sugar, sodium, fat and higher protein.

Moving back to weekly weigh-ins now that I know surgery hasn’t set me back. Almost at revised goal and have lost almost 2/3 of my original body weight! Focus shifting to regaining full flexibility and muscle mass - fingers crossed for surgeon clearance for that, starting physio and planning for return to the pool when I see him Wednesday.
MOMENT OF GRATITUDE: Recovery time has afforded me some wonderful new self-care outlets and joys 😊 Peppermint tea, testing some new recipes, egg white bites (have tried SO many versions…current fave is spinach, sun dried tomato and Parmesan), oatmeal bakes (this week carrot cake on the meal plan), reading actual books, morning brisk winter walks.

Losing 3.5 kg a Week

Lowest weight to date! So surprised as I was SO worried about losing progress after surgery. But I’ve been dedicated - walking 5K a day and upper body weights 4x week…the minute the doc sad I could 😂 Still inflamed as expected less than 3 weeks post-surgery so some of that still to come down and some of the loss likely muscle from not being able to do my full strength-training routine. Going to update my goal slightly anyway to reflect the 4.9 lbs of skin removed during surgery. Not married to it yet, body composition more important now, but seems like a reasonable place to shoot for right now until I see what return to strength training does.

Losing 5.1 kg a Week

Prepared shrimp three ways - poached, sautéed and low-fat coconut. Paired w edamame and Asian cucumber salad. G Hughes sugar-free shrimp sauce and Thai chili sauce for dipping - only 5 calories a tbsp! Soooo delicious and a great treat on a Friday night.
