I made my first spaghetti squash last night. I approve! While extremely bland (every source I read wasn't kidding when they said it had no flavor itself), it makes for a great substitute for pasta. I learned this morning it makes a fine substitute for hashbrowns, too, if you put them in your eggs (omelet, scramble, etc.). If you had them on the side with ketchup they probably wouldn't be quite the same.

Probably the best thing about it is that I have spaghetti squash coming out of my ears! This is not a veggie to buy if you're single. I have two large tupperware containers full of the stuff! I seriously think I'll have to eat spaghetti squash for at least seven consecutive meals in order to go through it all! I'm trying to think of ways to make it different so I'm not eating it like spaghetti the whole time (that's how I decided to try it in my eggs this morning). I think later I'm gonna make a "mac" and cheese with it, and then do "spaghetti" again for dinner. I think I'm going to put mushroom gravy on it tomorrow, something I thought of at one of the recipe sites where it said to "add gravy or sauce". Sounds good!

I have found the best recipe ever! Single serving eggless cookie dough!

I know, I mentioned this morning that I was going to make eggless cookie dough for my friend's birthday party this weekend, but I didn't think to make it a single serving! I found this bad boy today. It's 285 calories for a small bowl!

3 Tablespoons flour
2 Tablespoons sugar (brown or white) [I did brown because that's what I had]
1.5 Tablespoons butter
1 Tablespoon milk
Splash of vanilla extract
As many chocolate chips as you want!

I didn't worry about an order. It blended all just fine all thrown together. It's not like you're baking it, so it doesn't matter (notice: you CAN'T bake this because it doesn't have anything to make it rise).

It's pretty low in calories for a sweet snack and it's a pretty good size. It's much larger than a chocolate bar! It lasts forever! Sure, it's not something to eat every day, but since it's a single size serving you don't make a ton and then keep going. I think it's a decent diet snack. :)

LOOK! LOOOOOOK! 129! I BROKE IT! I BROKE 130!

*happy dance*

I screamed and hopped off the scale this morning. I was a happy girl, tell you what.



There's soooooooooooo much produce in my fridge right now. A friend of mine came over the other day and when he went to the fridge to get a beer he said I had one of the fullest fridges he's ever seen, let alone for one person. I'm seriously throwing my weight into things to get it to fit in the fridge! I have that much stuff for myself! I'll go through it all, too...I always do!



Tonight I gotta test some egg-free cookie doughs (yes, so you eat it without having to bake!) for my friend's birthday bash this weekend as well as start to freeze the margarita popsicles for the occasion as well. Yessir, it's going to be the caloric little weekend, but after seeing how quickly I can shed off that excess, I'm not too concerned. I might be a bit disappointed with how bloated I'll feel, but it'll come off soon enough.

Friday night is, as mentioned, one of my best friend's birthday bash. It's going to be held at her dad's hugeeeeee house in a city over, with lots of space to run around and make bonfires in. She invited a ton of people, expecting only 1/8 or so to say they would show up (it IS the weekend of the Fourth), but over 80 people have said they're going to attend, and most of them probably will! It'll be a night full of laughter, fun, booze, and food (over 40 people have said they're bringing food and for some awful reason, an impromptu chili cooking contest is going to happen).

Saturday is my family's Fourth of July party, which will be just a chill cook-out. Burgers, chips, salads, watermelon, etc. I can be good at that one, having a burger, a small helping of some potato salad and a bunch of fruit. No cake at this party, so that'll be good!

My brother is coming back down to my city that night so I can take him to some of the new breweries in town and go back to some of his favorites. He lives in the Upper Peninsula, where good beer is scarce, but he's one of the "founding patrons" of the Soo Brewing Company, so he gets special deals and is on their board to talk about the progress of the brewery...yeah, he's hooked on good beer now but doesn't get a lot of it! So beers, beers, beers for Saturday night!

Sunday will be more chilling with my brother and then that night we're going to fireworks with the family, as per tradition. That will be my night to be GOOD; my parents generally bring chips and salsa and chocolates and baked goods and sodas and stuff, but I'll bring a thing of water and a bowl of fruit as my treat while waiting for the fireworks.

I have absolutely no clue what's happening on the Fourth. Strange! The actual holiday and I have no idea! I'm sure I'll end up at some cookout, though. It'll be unavoidable.



So, there's a lot of good in this journal entry, right? Well, here we are, getting to the bad part.

I was pumped, ready to run hard yesterday. When I got to the gym I ran a short warm up run, did some hard arm workouts, then ran two miles. I was thrilled. I had a long stride and for the first time since high school, I was able to maintain proper breathing techniques longer than five minutes. I felt GOOD. I wasn't tired at all, rounding the two mile mark. Somewhere shortly after, though, something must have distracted me and I fell out of my breathing and was back to your normal panting. I made the mistake of trying to get back into proper breathing techniques, which slows down your breathing (one full breath every four steps or so, mine's more like 6) and makes you breathe in your nose and out your mouth. I exhausted myself because my body was back to being used to intaking so much air and to not breathe as much made me dizzy. I had to walk for five minutes, but then I ran a fast, fast mile to round out three miles, the most I've ran since December!

I walked for five more minutes, feeling damn good. My legs were almost a little numb (I seriously couldn't feel them at all) but I wasn't too concerned about it. I stretched after that, maybe a bit too hard, trying to push my hamstrings into letting me rest my head on my knees while standing up with my feet together (I did it! I've been an inch away for WEEKS). I then did my cool down on the bike at the lowest setting and a low pace for ten minutes.

When I got off the bike I almost fell over. It felt like someone took a knife and sliced it across the back of my left upper calf, right where the muscle starts off the knee. Sharp, painful. I walked with a limp out of the gym and almost cried on the way home. An excellent workout where I felt amazing and never really winded and I end up getting injured?!

I came home, took a bath, popped some ibuprofen, and spent the rest of the night elevating it and massaging it. After the bath it felt less sharp, more like just a strain. I hoped it would be gone when I woke up this morning and while it's not as bad, it's still irritating and always there. I believe it's just a strain and I'm giving it at least two days off. Today was supposed to be my yoga and abs day anyway, so not a huge loss.

Still. Why so many injuries? :(

Not the greatest run ever, but there's some silver lining to it!

I decided to run outside instead of going to the gym because other than Saturday, this afternoon was the first sunshine we've had in a week! It was also 75 degrees, a good running temperature, so I couldn't turn down the opportunity. I figured I'd run now and then later tonight do lunges, kicks, squats and wall sits and some yoga before bed.

I think that I messed up the beginning of my run by jog!walking the length of the parking lot (where you're at a walking pace but you're picking your feet up more than you would walking). I wanted to get exactly two miles because I was kinda timing it and the two miles start at the road. The parking lot to get to the road is huge. I think my muscles "warmed up" to the point of that stride and thought that's how I was going to use them, so the first mile was absolute hell. My lungs felt great and I had a ton of endurance, but my stride just couldn't open up and my legs wanted to give out. However, the second mile was awesome. My muscles got out of their funk. I haven't had a stride like that in ages (My stride was so long I kicked my butt! I shocked myself and about toppled over!) and I sprinted the last long block, something I haven't had endurance for since December.

My time was almost exactly 20 minutes for two miles, which is where the good news comes in. When I time a mile it takes me 10 minutes...so I'm on par for a 30 minute 5k! Not that 30 minutes is anything to call home about, but this means that MY ENDURANCE IS COMING BACK! I can keep pace for a long time! YESSSSSSS.

Also, it took only two minutes for my breathing to return to normal.

I'm coming for you, physically fit. I'mma get chu.
