It has been about 8 weeks since I started my new lifestyle and I have shed nearly 50 lbs, my blood sugars are nearly ideal with much less diabetes medication necessary and I feel much better. I do realize that this is a very short sample size time wise and the real test is whether it is sustainable. My feeling is that it is going to be a lifelong commitment because it has been very easy to eat this way.
I have begun to experiment with different recipes in order to mix things up a bit. I have been eating a lot of the same meals because I make up a batch of turkey chili, for example and have 5 of 6 helpings left over and I need to finish them off over the next several days. No complaints on that score since I find it very tasty and satisfying. I also eat virtually the same meal each day for breakfast because it is a nice light way to start the day off.
I am not sure if interested parties can see my food log but I hope they are available.

I also try and drink as much water as I comfortably can. The intention is to drink 1/2 your weight in oz per day. At my weight of 480 lb that means 240 oz. I usually make it to 125-150 oz. I have a clear glass mug that holds 25 oz and I am with it nearly all the time.

The biggest change in my eating is I have eliminated dairy and grains from my diet. I also have gone to organic chicken, ground turkey and wild caught tuna and salmon as the mainstays for my protein. There have been other things as well such as trying to eat three smaller meals with small snacks between meals for the purpose of leveling out my blood sugar spikes. It also makes it easier to stay true to the plan since you don't get hungry eating six times a day and therefore don't make bad eating choices.
I found out that I have an intolerance to dairy and also mildly to eggs as well.
A few people commented that I should not stop my diabetes meds and I want to assure you I have not. I have however eased back on the amount of insulin I inject to match the drop in blood glucose readings. My readings fell dramatically and my 7/14/30 day averages are 114/117/123
