Happy Hump Day Everyone!!

Well Wednesday is here again. The kids are off after today for a long weekend. YAY?? lol

Well last night I was pretty proud of myself. I got up yesterday and decided to make a salsa taco dish I found a recipe for. Well in case any of you missed other journals I can't cook. lol

But this chicken was YUM! The kids all ate it and loved it. My oldest ate 3 plates. She's a fussy eater so that was definitely something. At 13 and weighing 72 lbs she can stand to eat. Lucky her. :D

I even found a recipe for homemeade taco seasoning. This let me control the sodium content. Hubby has high blood pressure so I'm always trying to "trick" him with salt. lol

It had a great kick to it. Loved it!!!

I did something right lol

Well I am off to start waking children up for school... Let the games begin!!! lol

Have a wonderful day everyone!!

Oh the seasoning I made tasted better then the packaged stuff.. I'll NEVER buy the pkged taco seasoning again. :D Make em at home.. if you can't find taco shells use tortilla chips. either scoop it on the chip or pour over a whole bunch of them.

Well, you 'can' cook! If you followed a recipe, then you can cook as good as most people can. LOL. And you even got the kids to eat it! How's the gym thing working out?

Good job finding a recipe the kids will eat. My boy is 23 and on his own, but comes over and cleans out my fridge once in a while, lol. I'd love that recipe for taco seasoning, my hubby too has HBP. If you don't mind sharing, I'd appreciate it! Thanks. :-)

I posted the seasoning recipe and it keeps saying pending.. BLAH Here it is though: 2 tbsps chili powder 1 tbsp cumin 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp ground oregano 1 tsp paprika 2 tsps pepper 1/2 tsp red pepper flakes (I used Cayenne pepper instead what a kick) 2 1/2 tsps salt (I omit this or put very little no one even noticed) Directions Mix ingredients together. Sprinkle as needed on food. Store remainder. And the salsa chicken I used is: Ingredients 4 boneless, skinless chicken breasts 1 cup salsa 1 package reduced sodium taco seasoning 1 can reduced fat cream of mushroom soup (condensed) 1/2 cup reduced fat sour cream Directions Add chicken to slow cooker. Sprinkle taco seasoning over chicken. Use Homemade recipe Much better Pour salsa and soup over chicken. Cook on low for 6 to 8 hours. Remove from heat and stir in sour cream. Serve with rice. I served this and the next day everyone was looking for more but alas they ate it all.. lol So off to buy more chicken and stuff to make it again this weekend.. haha..

Yum! I will have to try the Taco seasoning, I hate how salty the pkg ones are, even the reduced sodium ones. I love crockpot recipes too!
