Asparagus Frittata
Quick and easy recipe that makes a delicious asparagus frittata in record time.
Ingredients
Directions
- Heat olive oil into a 10-inch oven-proof frying pan over medium high heat.
- Add onions and salt and cook, stirring occasionally, until onions are softened, about 3 minutes.
- Add asparagus, reduce heat to medium-low, and cook, covered, until the asparagus are barely tender, 6 to 8 minutes.
- Pour in eggs and cook until almost set, but still runny on top, about 2 minutes. While cooking, pre-heat oven broiler.
- Sprinkle cheese (Swiss, Guyere or Mozzarella) over eggs and put in oven to broil until cheese is melted and browned, about 3 to 4 minutes.
- Remove from oven with oven mitts and slide frittata onto a serving plate. Cut into wedges.

Reviews
I upped the eggs to eight for a 12 in. pan and used mozzarella instead. Used steamed asparagus just enough to unthaw from being frozen. Definitely will do again.

I think this was very good, I think next time I may add little ham - I also used fat free swiss and egg whites to lower my cals and fat. Had to bake a little longer, I think the whites took a little longer to cook. But very simple and good.

Delicious. Let the asparagus go for 8 mins, and I think the Swiss would be better than the mozzarella
