- Preaqueça o forno brando (120ºC). Forre 2 assadeiras com papel alumínio ou com papel vegetal e reserve.
- Bata as claras numa tigela de vidro ou metal até ficarem consistentes. Adicione o açúcar aos poucos e continue batendo até formar picos firmes (ponto de neve). Abaixe a velocidade da batedeira e junte a baunilha e o chocolate em pó. Desligue a batedeira e junte as gotas de chocolate com uma colher ou espátula.
- Passe colheradas da massa para as assadeiras forradas deixando um espaço entra cada suspiro para poderem crescer.
- Leve ao forno por 1 hora. Desligue o forno e deixe as assadeiras dentro dele por mais 2 horas até os suspiros secarem bem.
