Chicken with Olives and Lemon
Delicious chicken recipe that speaks for itself.
Ingredients
Directions
- Heat the oil in a saucepan and fry the chicken until lightly browned.
- Add the stock, mixed herbs and lemon. Cover and simmer for 20 minutes.
- Remove chicken and whisk in parsley, spread and honey. Boil and reduce until slightly thickened.
- Replace chicken and reheat.
- Serve with the boiled new potatoes and your choice of mixed vegetables.

Reviews
Recipe doesn't tell you when to add the olives - I did it at the same time as the lemons. I also left out the vegetable fat, and served with plain couscous instead of potatoes. It was a very nice recipe - everyone loved it (baby and toddler included)!

I haven't tried this yet, and I plan on halving the recipe because it's just my husband and I trying it. I will let you know how it tastes this week after I get the ingredients.
