A great summertime refreshing vegetable soup.
Ingredients
Directions
- Combine all ingredients in a stainless steel or glass container.
- Cover and chill at least 4 hours, serve in chilled mugs and enjoy!
- Note: optional to add a dash or two of Tabasco or hot sauce to spice up.

It is not bad as a cold vegetable soup, but nothing like any gazpacho I ever had in Spain. Please call it something else!

I've used a version of this recipe for years. It's great. You can also put half of it in the blender and mix it back with the rest to give it a more soupy consistency. YUM!

I've been looking for a good gazpacho recipe for years. This looks great and will work well with Paleo.

Ok - its my recipe and I love it so probably the stars don't count but I wanted to mention that I use V8 juice instead of tomato (taste preference) so try this if not a tomato juice fan! Also, I often leave out the oil which reduces the points and I don't find I miss it much.
