Eggplant in Spicy Sauce

Eggplant with some zing.

Ingredients

Directions

  1. Heat oil in a large non-stick skillet over medium-high heat.
  2. Add onion, ginger and garlic. Cook for about 2 minutes, until onion begins to soften.
  3. Add eggplant and cook for 8 to 10 minutes. It should be lightly browned in spots and tender.
  4. Add water, curried mango sauce, chili-garlic sauce and sesame oil.
  5. Reduce heat to medium and cover the pan.
  6. Stir occasionally, 10 to 12 minutes, or until most of the liquid has been absorbed.
