I've decided to start eating more home cooked meals. I made baked chicken last night with green beans and smothered potatoes. It was so delicious. I had it for lunch again today (above picture) and plan on having it for dinner tonight at work. I'm joining the challenge to stay away from sweets for four weeks. I will need God on my side for that one.
The husband and I got into a tremendous fight today. I wanted to grab everything and stuff it into my mouth, but I realized that it wouldn't solve anything. I sat down with my sensible, but filling, lunch, and slowly savored the flavors. I think I will make some coffee now.

So I think work is my major downfall. I have an extremely sedentary job. I work nights (12 hour shifts). The majority of my night is spent in a recliner dozing off and on. I do not sleep properly 5 nights a week. During the week, I usually get about 2 hours worth of sleep after I get my son on the bus. My schedule is so screwy. Apparently this is not working with weight loss, but on the contrary, working against it.
I don't know what to do. I feel so discouraged. I cannot change things right now work wise until my patient passes away. I love my job. It's just seemingly working against my goals at the moment. I have been in this position for over a year now. I have gained approximately 40 pounds in the past year. *sigh*
Maybe I will start just doing salads for dinner or I can perhaps find some kind of good shake or smoothie substitute so that I'm not inhaling too many calories at night since I will be so sedentary.
