Well, I'm down to 271.4 lbs. I can actually notice a tiny bit of a difference in size in my belly. Therese says she noticed it too yesterday. I know if I keep this up it will work and I'm starting to get results, so I'm definitely gonna keep it up - yeah for me :)

So I've been trying to eat correctly and less often but with more balance and I've found that I seem to be doing better controlling cravings. I eat a lot of fresh veggies and low fat fruits like raspberries and strawberries but I still add in an occasional orange or banana or some pineapple so that I won't crave. I have made chicken in the oven and I use my roasting pan that has a wire grill to elevate the meat from the bottom. it prevents the chicken from sitting in the fat drippings and allows more fat to render from the chicken. I admit that I do eat the skin because I just like it too much but the size of the chicken piece I eat is literally only 2" by 3" - tiny thighs and I eat a lot of veggies with it, both in the form of a 1.5 cup spring mix salad with no fat Italian dressing and steamed fresh veggies like carrots or green beans or broccoli. I love my steamed veggies and I only steam them to an 'el Dante' doneness because I love the crunch. Also I do not add fat like butter or oil because I use onion and garlic powders (not salts)and Italian seasoning that has zero salt and a black/white/pink pepper, coriander, all spice blend. More than enough flavour for anybody. I also found that my body seems to be accepting the diet now with all the walking I've been doing. Averaging about 2km daily. I feel like I am losing weight very slowly and that is exactly what I want... I want to lose it very slowly so that I won't yo-yo like many end up doing. My goal is to be at my desired weight by July or August of 2019. A realistic goal I believe is possible and fully doable.

I haven't weighed myself in a week because I was frustrated. Weighed myself today and found that I have lost 1.8 lbs. So I'm feeling a little better now. I'll weigh in again next Friday and see how it's going. Been pretty good at keeping the walking up every day and eating proper portions with low carbs and very low sugar. Gotta keep going no matter what.

So here is my typical breakfast. I don't always have the cornmeal bacon, sometimes I will change it up with cured bacon. I go to the wholesaler to buy my bacon because it tends to be much leaner than conventional grocery store bacon. I also make my own cornmeal bacon (being Canadian of course) from extra lean pork loin and I cut all the outer fat cut away before curing it. I know exactly what goes into my Cornmeal bacon and I can assure you there is NO preservatives and very little salt and sugar. I actually use Dextrose instead of sugar. It takes 14 days to fully cure because of the lower sugar and salt levels compared to a national brand but it's definitely worth it.
Anyways I'm rambling on... so as you can see; 2 large boiled eggs, 2 small pieces of my cornmeal bacon, 1.5 cups of spring mix salad with 1.5 tbsp. of Kraft Fat Free Italian salad dressing, a mini cucumber with a pinch of Windsor Half Salt on each half plus 1 slice of Rubschlager Bavarian Multigrain bread cut in half and toasted (which I forgot to put in the picture) with 1 tsp of soya margarine. Plus I have my coffee with this meal.
This totals out to 27% of my RDI with (29%) Carbohydrates, (44%) Fat, and (27%) Protein. Additionally my Sugars at 10.36 and my Sodium is at 1614 which is a little over half of my daily allotment but I can live with it because I sweat profusely when I exercise.
I don't think this is too bad but I would definitely accept any comments and/or suggestions as to how this compares overall as I am new to dieting and I want to do it right.
