chicken quesedia without the tortilla.. but its still bangin.

Way to GO! What I do is make a pancake/crepe/wrap sort of substitute by blending (with immersion blender) 1 T cream cheese per 1 large egg (usually use 2 each) and fry up in a 5" skillet for a couple of min. each side, makes 3 - 6, depending how much batter you use. This makes VERY acceptable alternative for tortilla shells, or mini pizzas, etc! Good luck!
