The kids loved yesterday’s experimental meal so much, that I woke up early enough to make it for Mac before work, he liked it. I doubled the recipe and baked it this time. Also made sure I added oil and threw in some chunks of cheddar cheese. 2NC

@peasy yes, it’s super easy!!
I use:
4 tbsp almond meal
2 medium eggs
1 1/2 tbsp cream cheese
2tbsp bacon bits/crumbles
1 tbsp oil
2 tsp Parmesan
And I season with garlic and pepper
Today I doubled the recipe to serve four. also cubed up some cheddar and stirred it in. Baked at 350 for 25 mins.
When making a “single serving”, I only eat half, (because I get full fast) then give some to my kids with their bfast/snack. But I just stir the ingredients in a mug and microwave it for 90seconds and then flip and microwave another 35seconds or so.

I used almond meal. Sometimes I even do coconut flour, but it needs way less coconut flour than almond meal flour,
I guess you could try different flours that are okay with your WOE, start with a little and see how they absorb the moisture, I get my batter to a thick pancake batter consistency for cooking it. I want to say 1TBSP of coconut flour absorbs as much as 3tbsp of almond meal flour.

@peasy I saw someone post a 90 second bread on here several months back. The microwaving part kinda turned me off from trying it. I don’t ever use my microwave... so it took me a few days to try it and it was actually really good!! So I altered it a tad and have been playing around with the idea ever since. I have even used the concept to make sweet breads...
For just a basic bread not a loaded Bfast type I do
3tbsp flour (almond meal)
1tbsp oil
One egg
A dash of garlic, salt and pepper
Then microwave it for 90 seconds

@ny_shelley from what I just read the words are pretty interchangeable. Some companies blanched and take the skins off, others don’t. Some companies make their flour finer than others. So really it depends which brand you buy on the texture or color
