wow i only like eggs scrambled/omlette but I got to say that looks good!

I love eggs any way I can get them :) Here it’s poached on avocado toast.... admittedly I am addicted to avocado so I trend to put more on than I should... but the poaching means no added fats as there are plenty enough in the avocado ;)

Jimsterman they are one of my favourites Just avocado with a splash of organic lemon juice and s hint of cayenne. But The secret is in the pouching... plain salted water at a full rolling boil.
