I LOVE soups, especially super creamy, rich, high carb ones. 😩 so making a lower carb option was kinda hard for me. used a cup of cauliflower rice, hoping it breaks down and thickens up the way potato would. I decided not to add onion or bell pepper.

@draglist this fall has been strange here, SO cold overnight and SO hot during the day. So the days we are indoors all day and cold, a crockpot stew is needed!!!

@horseshu1 I actually felt daring adding the can of diced tomatoes... and now I am regretting it, that was my first time having tomatoes in over a month and I have awful acid reflux 😩😩

I made Beef Bourguinon stew last weekend - one onion instead of 2, served w/o noodles - tender, rich, yum!

Soup looks devine! I too love my soups with a thicker broth. My suggestion would be to take some of those veges and buzz them up in a food processor and add it back to your soup. This will give you a thicker broth.

@mgussman that's a great idea I also thought about boiling the cauliflower separately and turn them into "mash potatoes" first, but I am always looking for good excuses to buy new small kitchen appliances 😉 thicker soups would suffice!

yes buzz some of the veggies and then u can add cream cheese too.

You an also buy riced raw cauliflower, fresh or frozen; and grated veggies for soups / sauces - onion, carrot, and celery packaged together.

I try not to buy veggies in packaging (I'm kind of a hippie about waste/trash)
