I LOVE soups, especially super creamy, rich, high carb ones. 😩 so making a lower carb option was kinda hard for me. used a cup of cauliflower rice, hoping it breaks down and thickens up the way potato would. I decided not to add onion or bell pepper.

I was thinking this same thing a few nights ago! Each year when a cold front comes through, I make a big pot of stew. Going to miss my taters and carrots! But, yours looks really good! Let us know how it goes.

@Crankybuzzard-I use turnips in my vegatable soup instead of potatoes! It is a great replacement. Just chunk them up as you would a potato

The cauli won't thicken it up. A little cream or cream cheese can add to a soup depending on what kind your making. Broccoli and cream cheese makes an awesome soup. Especially with a little bacon and blue cheese or Parmesan in it.

Personally I think your soup looks great. Try different spices in it. A little chili powder to give it some kick. Maybe even try a little Psillium powder to thicken somewhat.

I'd use celery in "things" often, but it got expensive, so now it's almost never.

@jipper500 I love celery, especially juiced, helps me be healthier! It isn't too expensive in Cali, we have a local garden box delivery service.

@jlbenitz thanks, I added ACV, sage, pepper, chili powder, cumin, HPS and garlic. And the tomatoes chunks are fire roasted 😍

I also fixed up a zucchini and dumped in some avocado oil to up the fatties!! 👍 my family will eat it over rice or with cornbread... and I'll just drool over the sweet cornbread 😱

It's funny how little I miss bread (my fave). It's sugar I crave.

@jipper500 I don't crave normal bread just cornbread with honey butter and cinnamon 😩 cooking and preparing it for the family is going to be so hard!!

It's been slow cooking for 6hours, my house smells amazing and the cauli rice is so tender that each time I stir it the pieces break apart and it is slightly thickening up the broth! 👍 and the meat is incredibly tender 🤤

@paulanavarette ain't that the truth!! But it was so delicious I can't believe it was SO low in carbs and high in fiber. But it was even with the protein and fat, so I added cream cheese and cheese 🧀
