Okay, so it's only Monday, but I'm already thinking towards the weekend. With Frittata Friday coming, I've come up with an idea for my next frittata, and it serves two purposes. For a while, before I decided to get back on track with my low carb eating, I was eating pizza every Friday, which didn't bode well for my weight history, or my health. But I'm a pizza freak, and that's how I rationalized what I was doing. Getting to the point; I can satisfy my desire for pizza, and stay true to Frittata Friday, by making what I call a "Za! Frittata!" It will contain many of the elements of a great pizza, but still be a frittata: Italian sausage, pepperoni, mushrooms, spinach, a bit of pesto sauce, alfredo sauce, and some feta cheese; low carb and great pizza flavor to the max. I'll also be making my version of Chicken Zoodle Soup, for Soup-er Saturday. It's planning ahead that helps me to stay on track, and not miss some of my favorite high carb foods. Sounds very tasty...I am with you, I like to plan ahead! I usually have my menu planned for the week so all I have to focus on is what I make for Bruce. When I don't plan, I tend to grab and swallow:)

I'm glad I'm not alone, in this thought process. When I don't plan ahead, I'm more likely to fall prey to the high carb temptations that has the domino effect of, 'since I've already eaten this, then I might as well eat that', then I'm faced with starting all over again. They call that "Yo-Yo dieting"; been there, done that! I'm not going down that road again!!!
