Do you think you could substitute zucchini for the cauliflower?

I have to caution you, skywhite, about using zucchini ... it's has a lot of moisture in it. If you shredded it up, you would have to press on it with paper towels quite a bit to remove all the excess water. I would love to hear how it turns out, too. Summer is coming and we always need ways to use up our zucchini.

Yes it does. Right now I have bag and bags that are shredded and frozen. When they thaw it's pretty easy to get the water out.
