OMG!!! What have I become?!?!?! You're making me into some kind of vegetarian MONSTER. You're all in on it, Arabella, VeggieJunkie, Sparrow, et al...

I made this veggie stack with NO meat... I know, CRAZY... and it was delicious!

Grilled portabella, eggplant, yellow pepper, Jarlsberg cheese, avocado and sunny side up egg.

Hehehe!!!! We use the indirect approach to draw you in. :))) That egg is perfect too. Mmmmm! You are getting plenty of fat and some protein from the egg yolk, cheese and avocado and the carbs are decent in regards to the veggies. Great job PoulC! It's a nice balance. Me likey. :))
