Cortisol rising from extreme caloric deprivation. Adrenaline rising from low blood sugar. Stress hormones and sleep don't mix. Get a realistic caloric intake. 760 calories at 285lbs isn't going to work. 15 grams of protein isn't going to work. Putting your stats in the most accurate tdee calculator I know says your BMR is 2080 and tdee is 2480. You're trying to run a 1300-1700 calorie deficit. That's why you cant sleep. At 285 i'd look into a low carb/keto diet. It will help you get your insulin sensitivity back.
