My carbs are never more than 20 grams per day but usually average around 10-12 grams. That means that carbs make up 5% or less of my total calories. I limit protein to less than 20% of my total calories and keep fat to around 75% of total calories.
I also find that dividing my meals in half and eating 6 times per day is the most efficient way to keep my blood glucose from spiking.
