I marinate swordfish offcuts in lime juice, diced red onion, jalapeño brine, garlic, salt and pepper for 30 minutes — I like it firm but still rare inside. Then use a potato peeler or a mandolin to create a pile of papaya ribbons. (Try to find a firm, greenish one that isn’t too ripe.) Add avocado, coriander, then sprinkle on sesame seeds. (If you prefer you can also use rosalini tomatoes and cucumber ribbons if you don’t like papaya.) 😊
