have seen a small loss, which should be more for being around 800 calories per day. eating much smaller portions and not as hungry as I used to be, but then the metabolism adjusts.

Yikes, 800 cals s day, are you serious??? The first time I studied nutrition about 40 years ago, I recall the Workd Health Organization making a statement, that 600 cals per day was considered starvation.
I don’t want to preach to you, but I have a lot of experience and unless there are medical reasons, 800 seems very harsh.
I’m certain you would lose more by eating more. I trained professional bodybuilders (women) back in the day when the sport was new and some were on a very well balanced 1200 per day, they were moving tons of weight in the gym of course. These days if I trained someone using all the latest research, they would be on a higher number of cals.
Like I said, I don’t know you or your conditions but my typing finger is telling me it’s too low. Please research this yourself, all the best, don’t just listen to me, all the best. 🙏

Fasting is zero calories. I'm wondering if the minimum calorie numbers aren't that relevant any more.

Fasting does meant zero calories, it means zero calories for the length of time you fast for. You still eat your goal target of calories, but just in a smaller time frame. Think of it as slight of hand like a magician 🤣
