I lettuce wrap most of my stuff! Tacos, egg salad, tuna salad, almost anything that usually has bread can be lettuce wrapped! Yummy!

I use low carb tortillas there only 60 calories for burrito size and 25 calories for corn tortilla size..low carb and calories

Tried corn tortillas toasted on a griddle couldn't tolerate it. My food got stuck in my throat and esophagus couldn't breathe. It was a bummer too, love tortillas. My primary doctor thinks it's more than a gluten intolerance now, referred me to a GI.

A dietician told me recently the packaging might say "gluten-free" but it may have been cross contaminated at a manufacturer with foods made of flour, soy, preservatives, dextrose, lecithin, etc. I just have to find a happy-medium so I can eat normal and not die of an allergy attack. 😉

I really enjoy cauliflower thins. I toast them, till they get a golden brown. Great substitute for bread. I find them at Trader Joe's.

I'm having the same issue with not being able to swallow. I went to a gastroenterologist and he told me to either drink a hot beverage with food or room temp water. No ice drinks as they constrict the throat more.
