Planning on eating a bigger dinner tonight than I have in a while. Hubby has been travelling all week, and when I'm home alone I tend to eat lighter in the evenings since I don't want to cook for just one person. He comes home tonight (with mother-in-law in tow......) so I'm going to have a nice meal waiting.

Breakfast: • blueberry-flavored oatmeal • 1 cup of coffee (raw sugar + creamer)
Lunch: • Lean Cuisine enchilada & rice
Snacks: • Hungry Cow 100-calorie chocolate rice snack thing • bowl of apple cinnamon Cheerios + almond milk
Dinner: • meatloaf (beef/veal/pork combo) + onions (sauteed in butter and wine) • corn & butter • tator tots/French fries + ketchup
