I’m visiting my son, daughter-in law and our first grandchild. Trying to maintain my WFPB diet while here. Had them over for dinner twice. First night I made quinoa and roasted sweet potato salad on arugula plus roasted leeks, acorn squash, broccoli and fingerling potatoes. The second time I cooked for them I made a black bean soup with diced tomatoes, the rest of the acorn squash, onions and some leftover refried beans and rice from a takeout and a sprinkling of cojita and lots of herbs. I served it with a light caesar salad. That night we had apple pie and coffee ice cream - a favorite of my husband and son. We also did some takeout with them which is difficult, because most vegetarian dishes have cheese or oil. I did the best I could with roasted vegetable tacos which had minimal cheese with lettuce, salsa and some beans and rice. Another day we ordered from a Nepai restaurant and I got pekora vegetable, and manchurian cauliflower (both fried). Yesterday we ate out at a Christmas festival. I had some of the hummus plate and French onion soup - lots of cheese. But I avoided meat entirely and only had alcohol once.
