Had my physical earlier this week, test results already sent. A1c is down, Vitamin D needs to be supplemented (in New England, no surprise). Snowing today, so I am hunkering down but managed to walk yesterday so that was good. Working on upping the fiber and fluid intake. That should also help with cutting calories. Have not been to Costco lately so I have avoided a major temptation. I was going to make meatloaf and meatballs with some ground meat I defrosted, but then decided to saute onions and garlic and just brown the meat and drain off the fat. One thing I know is that if you let yourself get a little hungry, normal food tastes delicious. I am mixing the ground meat into cabbage soup and that is filling and tasty. Still not sure what to do with the loaves of bread I have but I will probably eat up the spelt bread and maybe make a cheese loaf with the whole grain seed bread. And french toast for the freezer with the whole wheat loaf. I might also set up an exercise area somewhere with my bike and some weights and a mat. Still not able to see myself getting up in the morning for an 8:30 class but I am thinking about it.
