I made mango marmalade yesterday. Oh my gosh it was so good. And very, very easy.

I know you're making ice cream, too. maybe a ribbon of that marmalade in there... just a suggestion. I think it would be amazing with frozen yogurt, tang on tang... oh dear, I'm going to have to make something frozen this weekend. but much lower effort. lol

I picked fresh mangoes 🥭🥭🥭 fm "my" mega tree & shared the fruits, literally, of my labor with the mahvelous🐮🥧...don't think she could wait long enough to craft them into something more delectable than fresh off the tree, lol😂

Mango marmalade sounds like something I would like to try.

This jam was like zero effort . Peel the mango (6); roughly cut the fruit off the seed. put the fruit and 3 of the seeds in a pot with 600 grams of sugar. The recipe called for lime juice but I had lemons. Squeeze the juice 2 lemons into the pot along with the the empty lemon shells quartered. Bring to a rolling boil, then decrease the temp and gently boil till 205 degrees, volume has decreased and jam is thickened. Mine only hit about 195 degrees but the rest of the criteria was met after about 18 minutes so I stopped. Turned out great. When it was done I removed the seeds and lemon rind, put them in a larger holed colander and let some of the liquid drain off back into the pan. Put the jam in jars, put the lids on and that was it. Left them sit for about 8 hours then put in the fridge and the next morning froze what I didn’t immediately need. It made 4-5 half pint jars.

I make mango yogurt popcicles that I sprinkle with a Tagine when I remove them from the mold. Very good. Making mango ice cream is upcoming on my list soon.

Mango peels easily just with a vegetable peeler

It also freezes exceptionally well. it’s a great fruit.
