This is a great recipe. I may have to give this a try next Friday, which is our office birthday celebrations. I have been trying to bring foods that we can still enjoy with all our co-workers, even us on the diet. I love this cookbook too. I bought it at Sam's Club. Thanks for bringing this up! I purchased this same book (HG 200 under 200) @ Sam's about a week after it came out. :-) I skimmed thru it and thought it was Great...then almost forgot I had it (probably because I was still in P1 or P2 of FSD during that time). I'm looking forward to trying "That's a Lotta Frittata". :-) Thanks again for bringing it to mind...won't let it outta my sight again! lol Hope everyone loves the cupcakes!

Oh by the way, yesterday I made a HG recipe for dinner. We had orange chicken and I made her version of Fried Rice. I think that was one of the emails a few days ago. It came out soooo sooo good. Couldn't even tell it was low-fat!
