Today's OMAD was a baked chicken thigh, with the crispiest cracklin skin, plus a small salad of 1 cup lettuce (half green leaf, half Iceberg), 6 cherry tomatoes, 1/4 cup English cucumber slices, 1 small slice of red onion, 2 marinated artichoke hearts, 1 tablespoon bleu cheese crumbles, 4 tablespoons vinegar, 2 tablespoons Duke's mayo, and a sprinkling each of tarragon, marjoram, Italian seasoning, black pepper, pink salt. Delicious indeed!
