In preparation for my return to a low carb lifestyle, I made some low carb pancakes, using almond meal, for breakfast, along with breakfast sausage links. I used a recipe I'd gotten off allrecipes.com, and they were very tasty. They will be a great addition to my breakfast rotation, which is usually dominated by eggs, fried or scrambled, with either bacon or sausage. Next I'll be trying some pancakes made with coconut flour. Without variety it can be difficult, in the long run, to stay on course with a low carb lifestlye; by using innovative recipes, it becomes easier. The pancakes, I ate today, can also become the platform for low carb eggs benedict. I love versatility! :-)

Check out nomnompaleo.com . She has some amazing recipes that are paleo, and thus often fall into the low carb category....or can be adjusted as needed. grassfedgirl.com also has some great recipes. You are right. Being engaged with what you are eating everyday makes a big difference!

Thanks. As I have checked out a number of paleo recipes, I also realize, which you mentioned, many of their recipes are compatible with low carb. However, they must be scrutinized with caution, because though they may be lower in carbs than mainstream recipes, don't necessarily fit the low carb lifestyle.

You are right...but I like that they tend to keep things "clean". Found that makes a difference for me. Those two tend to be some of the better ones I have found. Nomnompaleo has a great index of recipes that makes it easy for me to figure out what to make. Her recipes are also usually pretty straight forward. Not too many ingredients or steps!

I have made them with cashew flour, low carb and delicious. There is a recipe also that you can make them with flax meal.

Also on higher carb days, 3 mashed bananas, rip bananas, 1 tablespoon of flaxmeal,and one egg, or egg whites, make good pancakes.

Thanks ladies. I just checked out the website: nomnompaleo.com, and the recipes look like a delicious adventure waiting to happen. I especially like their pressure cooker recipes, because that will make short work of some cooking that would normally take the better part of a day. Marissa, the pancake recipe I use can be found on: www.allrecipes.com; listed as "Quick Almond Flour Pancakes". I made some of the changes listed under other peoples comments, such as the addition of vanilla extract, a couple tbs of oil, and stevia to the batter, but they came out great. The next time I'll substitute seltzer water for regular water, listed in the recipe, to make them a bit more puffier, and may even add some fresh blueberries, to kick up the deliciousness quotient. It's a versatile recipe that can be modified to suit your tastes.

Marissa, you are so right about the tee-shirts. My favorite is the beef addition shirt: cow/cattle + cleaver = steak; sooner or later I'll be wearing that one. Vegetarians beware. LOL :-)

Wow thank you for the information, I love the websites, on some of the recipes they had the breakdown of carbs etc., but some they didn't.

ShyGuy, don't limit your morning meal to just typical "breakfast" foods. Venture out and try different things. For example, I love left over grilled chicken, pork chops with cheese slices, a tomato slice or deviled eggs. As you stated the point is to be creative so as not to become bored. You are doing a great job with that but I had to think outside the box when it came to breakfast. Lack of variety left me frustrated...keep up the good, you are doing great!

Thanks for the suggestion, however, my leftovers usually end up as either lunch, or dinner the next day. I do make some great spicy deviled eggs, so that will go into my breakfast rotation to keep things interesting.
