I decided to have spaghetti using zucchini instead of noodles. I want to limit the carbs. So the meal had zucchini, mushrooms, a little sherry to saute the mushrooms, spaghetti sauce, garlic and shaved parmesan. Delish! I bought a new kitchen gadget that shreds the zucchini so it kind of looks like spaghetti noodles. This was a quick and easy meal. I used butter and olive oil to saute the veggies, but could save 200 calories if I sweat the veggies instead. J

I second the "what is it called" comment! For my noodle based dishes (and in my home, there are a LOT of them as that's how I grew up!), I replace the noodles with shredded cabbage, usually that Dole Coleslaw mix. Just toss it in the microwave for a minute or so to soften it up and .... YUM!

Try spaghetti squash sometime; you'll be surprised at how good a substitute it is for noodles.

@diehard3, NikkiJP and tunalw, The gadget is called veggetti. It is a spiral vegetabe cutter. I bought it at bed bath and beyond, but it is a "as seen on TV" item and may even be available in local grocery or drug stores. $15.00. the Zucchini are of medium size and small enough to not need to seed them. :) J
