Oh I have to try this! I have a pretty meaty chicken carcass in the freezer that will work perfectly. Looks sooo good!

Ingredients
* 1 tsp olive oil
* 1/2 medium uncooked onion(s), thinly sliced
* 2 Tbsp ginger root, fresh, peeled and minced
* 2c uncooked green cabbage, thinly sliced
* 1c chicken broth
* 1 boneless skinless chicken breast half, diced
* 1-2c baby spinach
* 1/2-1c each, non-starchy veggies (ie. zucchini, celery, bell peppers, mushroom, broccoli, etc)
1-4 garlic cloves, minced (optional, cook with ginger and onion at the start)
Instructions
Heat the oil in a medium saucepan over medium-high heat. Add the onion, garlic and ginger; cook, stirring frequently, until just fragrant, about 1 minute. Add the chicken and sauté another 3-5minutes until no pink is visible. Stir in the cabbage cook about two minutes. Add the veggies and broth. Reduce the heat and simmer, covered, stirring occasionally, until the cabbage is tender, about 20 minutes.
Believe it or not this is only one serving. Lots of filling food that tastes great and very low calories.

I didn’t have chicken breast or green cabbage…let me tell you it didn’t turn out right. But that on me Kelly! Keep doing your thang!

It’s one of my favourites…. And it’s one of those types of meals you can have a big ole serving of without killing your calorie count.
