I am finally feeling better. I did not walk today, because the pollen is still so heavy. We were supposed to have rain yesterday, but we did not get enough to wash away the pollen.
Hope to get to walking again tomorrow morning. Either way everything is still on track. I made a crustless spinach quiche for lunch and it is so yummy. I think spinach is one of my new favorite vegetables. Now I have 5 pieces ready to use for breakfasts.
I am planning to fix eggplant and chicken parmesan tonight. I found a recipe that is low carb and uses almond flour instead of bread crumbs. We will see if it is any good. I am hoping the leftovers will reheat well.
