Google Filipino Chicken Adobo...I think you would love this dish. Soy Sauce, vinegar, garlic, peppercorns and bay leaves. This is very easy to make and makes your entire neighborhood pea green with envy because the aromas are amazing. I use skinless chicken thighs in place of whatever the recipe wants me to use because they are easy to come by and don't require me asking the butcher to chop them up. Serve this over steamed cauliflower rice. IT IS AMAZING> this is a dish from my childhood that absolutely haunts me. You can also cook in a crockpot. Season the cauliflower with chicken base, improves the flavor and color :)

Cauliflower rice is a GREAT substitution for the real thing. I love white rice and brown rice, however the level of carbs to be found in a serving make it off limits for me usually. I use a food processor to grate a large head of cauliflower. Then I put it in a microwave safe bowl and cover with a tight lid or plastic wrap. I steam in the microwave for about 5 minutes. I remove it from the oven immediately after it is finished cooking and mix in a tablespoon of chicken base and sprinkle in some garlic powder. This is such a great way to cram in more veggies.

I LOVE rice. Postitively addicting. That said, I find that the cauliflower rice is best if you are serving something over it, like a thai stir fry with coconut milk or chicken adobo.

I love rice, ALL kinds! And I LOVE the fact that you're bringing your family into the journey. It is beneficial to all; but, even if they stop, you keep going! :)
