We lived on a farm as a child,. when we harvested caves or pigs tongue was served,. used to like it in cold sandwiches. Very good with mayo and mustard.

Fancydaisy2 I'm also a big fan of pork tongue, beef tongue is tastier and nobler than pork tongue. Mustard sauce + mayonnaise super, a classic of the genre! But now I only eat homemade mayonnaise, because of my diet.
