Dinner is served! My moms veggie quiche recipe, delicious and healthy! Only 966kj/231kcal per serving. Let me know if anyone wants the recipe

Hi all, the recipe is as follows: For the egg mixture: 4 eggs One and a half cup of milk (any milk works) Half a cup of self raising flour (you can also just use baking powder and any flour of your choice) For the filling: Fry up 1 onion in an oil of your choice. Then add half a punnet of mushrooms into the pan. Add 3 large spinach leaves (chopped) into the pan as well as half of a small container of halved baby tomatoes. Take the pan off the heat and add two small rounds of feta (I used the spar feta with herbs). Por the filling into an oven proof container, no need to drain it. Pour the egg mixture over the filling and bake at 200°C for 30 to 45 mins depending on the thickness of your Quiche. This recipe serves 6, but I doubled it so that we could have leftovers. ENJOY

Once it had finished cooking, I added half a cup of cheese on top and broiled it just to get it Crispy and yummy!
