I love to travel and recreate foods that I eat a home. This is Cod with sweet potatoes and a spinach cream sauce. Simple and delicious.

Sweet potatoes Olive oil Garlic minced Cod Rosemary Thin sliced lemons Cream Cream cheese Butter Spinach Preheat oven 425 Cut sweet potatoes about 1/4 in. Toss with olive oil, garlic, salt and pepper. Bake till almost tender. (Remember it is a potato, it can take some salt) Transfer into baking dish. Cut Cod into 4oz slices. Season with Cod with salt pepper and top it with rosemary and lemon. Place on top of sweet potatoes and bake for 15-18 minutes. Sauce: Simmer cream, cream cheese, butter, garlic, salt and pepper till cream cheese begins to melt. Add spinach, cook till tender. Once complete then build your plate. And finishing salt if needed.
