I'm noticing that I'm not getting my 12 or so veggie carbs in. It takes alot of salad veggies to make 12 carbs, don't know if I can do it. I did when I first started and had a terrible stomach ache from the gas. Maybe if I add some to my breakfast?

First, try Beano for the gas (well, check for carbs in it first...didn't think of that). What about less "gassy" veggies? I know broccoli is gassy especially if over cooked. Canned green beans, regular green beans, cauliflower? I like Brussel sprouts and don't have a problem with them but I guess some could. It doesn't take much of them to fill the carb requirement either. I eat a Tomato with my breakfast and that is good. I like it with my one egg and meat/cheese omelet.

kale is a higher-carb leafy green, and is VERY good for you. the trick is not to over or under cook it. i cut out the tough stem parts, chop the leaves, then sautee with olive oil, garlic and lemon juice.

I use spinach to scramble with eggs. AMAZING. You can even try the frozen one.saute with butter and onion, add scrambled eggs and top with tomato. My son's favorite breakfast.

Some good choices to up those carb are artichoke (7 net carbs), tomato and sweet peppers in the eggs (high carb) I make a SF pumpkin pie, around 4 net carbs. I also make a breakfast quiche with mushrooms and spinach to get some in early. This is a good reason to make sure you get those veggies in I did read the other day in my Good Calories, Bad Calories book that they concept of 20 carbs a day goes all the way back to the early 20th century. When they were experimenting with carb restriction, they found that you needed to have 20 NCs to avoid the protein being metablolized like glucose.
