kmunson's Journal, 02 Nov 13

spent 4 hours this morning canning 18 quarts of home made tomato soup. My house smells wonderful.

Now off to the garage to clean it out so the vehicles can fit in there for the winter.

Then on to the vegetable garden to clear out all the plants so the garden can be tilled.

Finally I will get to rest while I watch my middle child play with her college basketball team.

Gotta get to it.

Have a great day everyone~

So you have finally canned your last jar for thus season. Both you and your garden can rest. What a wonderful thing you have made for your family, you have soup and pickles and sauces for the winter months, I would love to walk through your pantry. Did you can any green beans or other veggies? I love pickeled green beans and red bell peppers, hot, salty, sour and sweet, also low calorie. I add them to pasta with onion and garlic, a little olive oil and some balsamic vinegar, I really enjoy this with grilled chicken or grilled pork. Love my George Forman. Have fun cleaning so glad I do not face snow this winter I sometimes I have to scrap a little ice off the off the windows but that is the extent of our cold weather.

Actually I have a few other things to finish up. There is still some green tomatoes in a box in my kitchen that I am waiting till they get ripe. Then the apples that I picked off my tree I did not do anything with yet. Too tired today!

I forgot about your apple tree. Do apples give you a little time, I know that when your tomatoes are ripe you have to get to them quickly, do apples give you a little more time? If not I guess you will be busy for the next few days. I am glad you enjoy the canning process. The only time I have ever done anything like canning, a friend from church gave me several pounds of apricots and I made freezer jam. Only took me one afternoon not the several afternoons that you have spent each week. I really think you are wonderful, happy canning!

thanks DMom! I think it is a dying art. I don't know if my children's generation will have any idea how to do this. My children show no interest in watching or learning. I watched my Mom and learned a few tricks. Love opening that jar and eating the fruits of your labors. Hubby wants me to figure out how to preserve squash...freezing or canning. I don't like the stuff so that is harder to make myself spend the time on. Apples have waited as long as they can. They are getting soft now. I may not be able to use my apple peeler corer slicer on them not. May have to peel and slice by hand which will take much more time. I have to do those this week or throw them out.
