Elizabeth I think this one is perfect for you. Usually we make it with some special sausage, but I decided to go meatless 🤗

Kefir is a fermented milk drink obtained from whole or skimmed cow's milk by fermented milk and alcohol fermentation using kefir "fungi", lactic streptococci and sticks, acetic acid bacteria and yeast. Kefir, like other fermented milk products, has a probiotic effect, that is, it favorably affects the intestinal microflora and metabolism as a whole. Due to its complex composition, kefir can inhibit the development of pathogenic flora in the intestine. Its medicinal properties are based on the bactericidal activity of lactic acid microorganisms and the results of their activity in relation to the causative agents of certain gastrointestinal diseases and tuberculosis. In addition, kefir has an immunostimulating, calming and mild diuretic effect

Basically it's a kinda like a Greek style yogurt but more runny and very healthy. Have souer taste. You can find it in Polish or Russian shops, or in big supermarkets polish section fridges. Usually I have a glass of keefir before I go sleep.

This may sound stupid but why is it a cold soup? I know it's not always cold in Russia but you imagine hot hearty food there?

Ruuds, that's for the super hot summer when it gets to 25C🤣. I'm not Russian but that's what we do where I'm from.

Because all ingredients must to be cold and it's very refreshing in very hot summer days. We usually eat this soup in summer, I compare it to gazpacho 😁
