I usually find a ton of options for food as a veggie. Most of my diet includes a lot of fresh fruit, veggies, grains, legumes that I eat throughout the day and keeps my energy going. I would say keep trying various foods to see what may work for. I wish you well buddy!

I'm a veggie, too. I have not found the need to cut carbs, I just replaced the bad ones with good ones. Like replacing white rice with brown, white potatos with sweet potatos, white bread with whole grain, etc. Plus lots of veggies, fruit, beans, legumes, etc. Add in some healthy proteins (nuts, non-fat dairy, egg whites (if you are lacto-ovo), etc.) and you should not feel lethargic (unless you are eating too few calories) . Feel free to look at my food diary and results if interested. And don't forget exercise!

I think amryk said it best! The south beach diet is more about eating good carbs vrs. bad carbs. Veggies are good and maybe you shouldn't count them against your carb total??? I don't know, Idon't count carbs and South beach doesn't really require counting carbs. Good luck.

To feel more satisfied try to pair complex (good carbs) with some protein. As you posted your brakfast, there are almost no protein in it but a lots od cabrs. Try to make smoothie, something like 1 cup of silken tofu, 1/2 cup of frozen berries of your choice, 1/2 cup of fresh berries or 1/2 a fruit, 1-2 Tbsp flaxseeds or wheat germs, ice cube, about 1/2 cup Silk. Adjust taste adding some honey if you want it sweeter. The protein and fiber will keep you full for a long time and there will be no spike in your energy. For snack try baby carrots, grape tomatoes, bell pepper, cucumber with some ff cottage cheese (if you eat that). Make some wraps with refried beans or hummus and lots of veggies for your lunch. Add tofu to your dinner, mushrooms, and you will be fine. Good luck.
