I like Carrie Brown's Keto Ice Cream recipes; except she uses xylitol which I can't tolerate. I sub a mixture of cellulose and stevia.

Have you tried monkfruit sweetener. I'm liking it and it is keto friendly and all natural with none of the rumbly tummy problems of the alcohol sugars.

for the coffee I put in 2 cups of heavy cream 1 cup of HEAVY COFFEE sweetened to taste then added in 5 egg yolks to the blender. I am going to try glycerin next time to see if it really does make it more scoop able. Making banana and peanut butter powder next.

Rebecca, the glycerine is a good addition. Coffee ice cream takes more sweetener than other flavors, and that can make the ice cream hard. I would add some vodka; or rum in some other flavors. I use Allulose which is extracted from sugar and 70% as sweet, with some Stevia or Monkfruit to boost the sweetness.
