Keyten, I use a good vegetable oil to fry. EVOO imparts unnecessary flavor and has a much lower smoke point. Just a thought.

Avocado oil has a higher smoke point and mild taste.

I love snapper. The only way I’ve eaten it is Jamaican style, escovitch fish. My fav!!!! https://www.google.ca/search?q=escovitch+snapper+recipe&ie=UTF-8&oe=UTF-8&hl=en-ca&client=safari

Keyten, have you ever bought the “light” olive oil? It’s processed in a way that raises the smoke point. I use light for frying and EV for “cold” uses.

Lol I missed the part were you preferred only olive oils. The app doesn’t show all the recent comments sometimes. Google to make sure you’re getting a brand that sells real olive oil.

@keyten have you tried Avocado Oil, it has a high smoking point and a much lighter taste than EVOO. It is as costly as EVOO though.

When you subject EVOO to high heat it breaks its healthy chemistry down and makes it no different than any other oil but at a much higher price..

Thanks for the EVOO information Keyten. I will read up on that in the next for days. Yep, science changing all the time.

I know you can do normal sautéing with EVOO, but I thought high temp frying was where the destruction was.
