It is great to be back home and where I am in complete control of what I eat and what I cook. I really love cooking and I have really enjoyed taking my favorite or new recipes and making them healthier and much lighter. I have converted so many recipes and using the calulator on here allows me to eat anything and know exactly what the calorie count is!

My husband and three kids, along with my best friend and her three kids all live together and most of us need to lose weight. My oldest daughter (14) and my friend's 2 daughters (14 and 9) are the kids (all the girls) in our family that really need to lose the most weight. The other kids (all the boys 11, 8, and 3) have a few extra pounds but their eating habits are not great at all. My 11 year old son is very active in sports and loves physical activity and has stayed pretty thin most of his life but his eating habits are horrible. He has started to put on a few pounds and it makes me really concerned for his health. He doesn't really like many veggies and would always prefer junk food over just about anything else. I never learned how to eat healthy as a kid and was a forced member of the "clean plate club" so I didn't even learn how to eat when I was hungry and stop when I was full.

I watched Jamie Oliver's Food Revolution a few months back and I think that is what really starting this journey for me, the real motivation that opened my eyes to what food can do to people. Yesterday my friend's 9 year old daughter was helping me cook dinner. I taught her how to use the big knife and trim up green beans and crush garlic and she had a blast. She got to participate in making a healthy meal and then eat it and enjoy the compliments from the rest of the family when they ate it. She weighs 118 lbs and has really struggled with making good choices. I want to help her so badly! We have been helping her measure food and write things down so she can see what calories she is eating and where she can make better choices. She really likes keeping track of things and measuring. In helping her and talking to her yesterday and then cooking with her, I had a idea. I think I want to teach kids to cook! Kids and families! I want to teach families that they can prepare fresh food not boxed and processed junk that just makes them unhealthy. I have a teaching credential and live in California... so... that means there are NO teaching jobs here. I have been struggling with how I can use teaching (something I love) to do something that really makes a difference and does not require me to be working so much away from my family. I am going to check into some nutrition classes and start researching and I want to start developing a curriculm. I am a Girl Scout Leader and I think I may use my troop as my first group and try things out with them. I am excited about not only losing weight and getting myself and my own family healthy but helping other kids be healthy too! I hope I can pull this together quickly!!
