This is a week that will be a test of the lessons I have learned in healthier eating and staying active. For this week I am back at a desk from 8-5. Friday night we will be entertaining. It is our week to host our Pinochle club for a potluck and an evening of cards.

So, I have 40 hours less of my time. I am not prepared to have once a year company. Lots to do in the house, have to decide what I will be serving, (I do have a reputation to uphold), and have to fit it all in on top of working out this week. I am feeling a little overwhelmed.

Guess I had better plan out the week so I can fit it in. Mornings have been when I fit in my elliptical. That has been moved to evenings so I guess I will get with it. I can clear my head and get a game plan together. I am thinking roast chicken for the dinner Friday night.

I wish you luck with the week of working AND entertaining on top of it! Guess it's "life stuff" so we need to be able to find that balance in maintenance anyway, right? You're just getting a head start! :) Oh, I'm going to make the baked chicken legs tonight...thanks again! I'm pulling off the skin first, though...will it make a difference?

Potlucks are a killer. It seems that the letter for my last name is always supposed to bring a dessert. Roast chicken is a safe bet.

redwinelover.... It will make a difference. I cook them with the skin on and remove the skin when I eat.I suggest if you do remove the skin to give them a light spray of oil, like PAM, I use the olive oil one. ; )

Runesinger - I was considering roasting chicken. I also found some pumpkin hiding in the freezer and thought I would do a pumpkin pie. Somebody has to eat that stuff. ; )
