Nuts are calorie-dense, especially peanuts, so that's one way. Others are cheese, lunch meat, pasta, avocados, bananas, protein powders...

Is it possible that you underestimated your intake? People often tend to overestimate there activity (exercise) and underestimate there food. Also I don't recommend that you force feed yourself but I do recommend eating when you are hungry and not eating unless you truly are hungry. Are you logging everything in your journal? You may have left something out? The 1200 cal guideline that you have probably often heard is just that, a guideline. While I don't advocate a very low calorie diet I do advocate that you learn how many calories your body truly needs during the day and adjust for your activity level. Creating a calorie deficit is not that hard or is eating high calorie foods. Just make sure it is healthy and don't over indulge. I also don't recommend that you eat the same foods all the time (I'm guilty of this). Change things up and don't let your body get use to what you are doing. Hope this helps. Hang in there you will make it to your goal.
