Ok, so I've been using a MIM (Muffin in a Minute) recipe I got from someone on the Atkins forum, but I adjusted it a bit. It's worked perfectly for upping my calorie, protein, and fat intake! And I really like the taste. It's a great substiute for the bread I've been missing. Here's my recipe with the nutritional info:

Muffin in a Minute (for Atkins Induction)

Serving Size: 1

1/4 cup flax meal
1/2 teaspoon baking powder
1 packet Splenda
1 tsp cinnamon
1 large egg
1 tbls organic coconut oil

Mix dry ingredients in a mug.
Add egg and oil, and mix.
Microwave for 1:30 minutes.
Turn muffin out on a plate and let cool a bit, then slice into four disks. Toast if you like (I do) and spread with cream cheese or butter. Enjoy!

Soak bowl IMMEDIATELY.

I just tried the MIM for the first time this morning. It was also the first time I ever had flax meal, so I was hesitant about the taste, but it was pretty darn good. Wish I had this recipe 20 years ago.
