WOW! Who needs mashed potatoes?! I made some, buttery, sour cream and chive mashed cauliflower to go along with some smothered pork chops, and it was awesome. :-) It looks like my creative juices are flowing again, and tomorrow I'll be trying my hand at making, a low carb version of, New England Clam Chowder, substituting cauliflower for the potatoes, and topping it with some crispy, applewood smoked, bacon as a finishing accent, and burst of flavor. YUM!!! :-)

Ummhhh Yummy Shy Guy!! That sounds delicious! What a coincidence I made the Loaded Just like Potatoe dish and it was DELICIOUS!!!! I had been putting it off for a while to try the cauliflower and boy oh boy I didn't know what I missing! Sounds like you had a wonderful meal!
