there is a local italian place that has an appetizer, Riccota Rosa with Mushrooms. I have never had it, but I imagine it to be just like this. Yum!

Just plugged in the numbers and realized that if I add some protein powder this would totally fit my WOE!! Definitely going to have to give it a shot now!!

It’s really easy to make. Just heat up marinara sauce and ricotta (2:1) (season with basil and garlic) and then melt mozzarella on top! I cooked the mushrooms in butter and then layered them across the top. It’s really good with bruschetta but that’s a big no no right now!
